The Butcher Shop: From Farm to Fork ($250)
You won’t want to miss this special Saturday event. Master butchers will begin the day with various breeds of cleaned whole hog and break them down right before your eyes. They’ll take you step-by-step through the process of trimming, prepping and cooking these cuts to produce delicious fare such as loin back ribs, sausage, collar trimmed butts, cracklins and much more. This is an up close and personal class so space is limited!
MBN Barbecue Judging Class ($90)
Interested in being a judge for barbecue competitions and getting to tast some award-winning BBQ? This class will certify you to judge Memphis Barbecue Network sanctioned cook-offs. Former MBN president Randy McGee will take participants through the process of tasting and judging MBN's three competition categories: whole hog, pork shoulder and ribs.
KCBS Barbecue Judging Class ($90)
Become a Certified Barbeque Judge (CBJ) for cook-offs sanctioned by the Kansas City Barbeque Society. In a half-day's time, you'll learn how to grade the four KCBS judging categories - chicken, pulled pork, ribs and brisket - and taste them during the process! Your class fee also includes a one year membership to KCBS.
Seating is limited for all optional events. Advance registration is strongly recommended. Walk-up registrations are accommodated on a space availability basis only.
