In this exciting class sponsored by the Beef Checkoff, butchers break down a steer half-carcass, taking you step-by-step through the process. See how to precisely render your favorite cuts and learn about lesser known cuts you may have overlooked. Preperation techniques are also discussed and demonstrated - and, yes, samples are provided! Space is limited in this up close and personal class.

Seating is limited for all optional events. Advance registration is strongly recommended. Walk-up registrations are accommodated on a space availability basis only.
