Hello all,

Does anyone have a recommendation for a commercial smokers to be used in a city restaurant. I could use info on an air scrubber too. I use a Lang 84 rig for the catering rigs but am restricted to what I can use indoors.
Any info would be greatly appreciated!

Look at Model SC-200 at www.southern-pride.com
I'm opening a bbq restaurant in Paris, France and this smoker appears to meet with city codes and regulations here.
There are other smoker models like this one from other manufacturers but in reseaching Southern Pride, I found them to have an excellent reputation in quality of product and service.

It depends on your personal preference. What type/style of cooking are you used to? Charcoal, wood, propane? Most commercial spots use the Southern Prides with gas assist and add logs for flavor. You could also go with the Cookshack FEC series and use pellets and minimal electricity to operate them.
