I have worked as a classically trained chef for 39 years for independent, national, and global chain restaurants. For 19 years, I also had the opportunity to lead R&D for a large BBQ chain restaurants which has included initiating and overseeing production runs at numerous plants. This has given me innovative opportunities to assist with plant-to-plate recipe development.
Awards and Accomplishments:
• 2nd Place, 3rd Place and 6th place Whole Hog Memphis in May World Championship BBQ Competition (2016, 2017, 2018) 3 Taxi Guys BBQ Team

• NAMI Foundation 2015 Center of the Plate Training – Texas A&M University
• Celebrated Chef 2008 – National Pork Board
• Regional and National judge for The Taste of Elegance through the National and State Pork Boards (2008 – present)

• Created multiple 3.5 and 4 star unique pork dishes for my 12 day restaurant, RC’S BBQ at the MN State Fair (1997-present
