Learn about the U.S. sheep industry and whole animal American Lamb butchery from “lambassadors” Mary Humann of the American Lamb Board and Mohamed Htoutou of Capra Foods, a Texas-based group of ranchers who raise Dorper sheep. The presentation will cover whole lamb anatomy, breaking down a split lamb carcass into primals and cuts as well as ideas for using economical cuts of lamb on your bbq menus. You may think you know everything there is to know about charcoal, but do you? Test your knowledge, or come learn something new as Joey discusses 'what charcoal is and where does it comes from.' Plus, he will talk about production, quality and availabilty in the US and all over the world. What makes charcoal special? Well, the only way to find out is to hear it first hand.
Come to learn, take away some tips, or add your own expertise for those around you. This will be a great, informative class.
SDG Food Truck/Trailer Panel

This class is the first of its kind. With the popularity of food trucks on the rise, many have questions. SDG Trailers will be hosting this deep dive into what is needed and required to start and maintain a food truck/trailer business. Not only will they discuss tips and tricks from those who operate their own food trucks, but also from the manufacturing side. Like: What is a must have? What size do I need? What areas do I need to park? Do I need permits? And so much more.
Before the class, for Monday's lunch, we will support some local food trucks as we invite them to come serve NBBQA attendees. This will give you a chance to look at different trucks; see types of menus, window set ups, decor and so much more. Write questions ahead of time and bring them to the class.
Lunch is on your own, but we encourage all attendees to visit the food trucks for some Texas, BBQ. We will post more details as they unfold.
Whole Hog Cooking Class

Now, you can see him in action as he teaches this amazing Whole Hog Class. Learn how to trim, prepare, smoke and decorate your whole hog for caterings, events, or just a family gathering.
